Question: Can you fight a ticket for failure to stop at a stop sign in a private parking lot?

Answer:

Because the stop sign is on private property, you can fight a ticket given by a government police officer.  However, according to Arizona Law (ARS 28-628), private property owners have the right to control their property when they allow the public to use it.  Therefore, they have the right to sue you in civil court for not following their stop sign.
